Chicken Fettuccine Alfredo

In an effort to make healthier versions of my favoite foods, I found this beauty! This recipe is from "Slim and Scrumptious" by Joy Bauer. I absolutely love her books and she always has awesome recipes!!!

11/4 pounds boneless, skinless chicken, diced
kosher salt and pepper
1 8 to 10 oz package of baby bella mushrooms sliced
1 package of whole wheat fettuccine
1 12 ounce can of fat-free evaporated milk.
3 oz fat free cream cheese
1/2 cup grated parmasean

Bring a large pot of water to a boil.
Liberally coat a skillet and heat over medium heat
Season Chicken with 1/4 teaspoon of salt and pepper.
Cook chicken until cooked through. Remove/
Add more spray and add mushrooms. Saute for 5 minutes or until a golden brown. Remove.
Cook pasta.
In a seperate saucepan, combine milk, cream cheese and 1/4 teaspoon of both salt and pepper over medium low heat.
Stir with wire whisk(this breaks up the cream cheese) until it is barely simmering for 7 minutes.
Add Parmasean cheese and cook for 1 minute. Remove from heat.
Add sauce to drained pasta, mushrooms and garlic.

Chicken Alfredo for less than 500 calories for 2 cups!!!
